Lion’s mane is a very unique and interesting mushroom. Instead of the classic mushroom-like spine and cap shape – the Lion’s Mane mushroom consists of many tiny spines cascading downward, forming ball-shaped structures that can grow quite large. The spines are small at first and grow over time. They are notably white when young, and can change color to light yellow or brown when mature. Not only are they a culinary delight, but they also boast many health benefits!

Most people compare the Lion’s Mane mushroom to the flavor of lobster, although many say it’s a great substitute for chicken. A great way to enjoy these mushrooms is to cut them perpendicular to the direction of the spines to make discs, then fry in a pan with garlic until the discs are golden brown. The riper the mushroom, the better the flavor, but keep in mind that if it becomes overripe it can be bitter.
