Branched oyster mushrooms are similar to the more well-known oyster mushrooms, and like those species, they are grown and sold in markets in Europe and China, but they grow differently – their gills are very low, forming a web on the stem. The cap grows to about 15 cm, pale yellowish, brownish or grayish in color. The strong scent has an element of anise. They are excellent sautéed in butter with salt and pepper, but they also complement any soup, sauce, or stir-fried vegetables.
Like other types of oyster mushrooms, branched oyster mushrooms help with heart health, blood sugar regulation, boost immunity, are a powerful antioxidant, rich in nutrients (fiber, vitamins, minerals) and low in carbs.
