{"id":1433,"date":"2023-03-08T22:18:26","date_gmt":"2023-03-08T21:18:26","guid":{"rendered":"https:\/\/nolanea.eu\/creamy-mushroom-soup\/"},"modified":"2024-02-28T12:22:19","modified_gmt":"2024-02-28T11:22:19","slug":"creamy-mushroom-soup","status":"publish","type":"post","link":"https:\/\/nolanea.eu\/en\/creamy-mushroom-soup\/","title":{"rendered":"Creamy mushroom soup"},"content":{"rendered":"\n<p>Ingredients:<\/p>\n\n\n\n<p>\u00bc cup unsalted butter<\/p>\n\n\n\n<p>2 packs (500 g\/pack) cut, fresh mushrooms to taste (we recommend using 2 types of gourmet mushrooms)<\/p>\n\n\n\n<p>1 pinch of salt<\/p>\n\n\n\n<p>1 medium red onion, cubed<\/p>\n\n\n\n<p>1 \u00bd tbsp all-purpose flour<\/p>\n\n\n\n<p>&nbsp;6 fresh thyme sprigs, tied up in a bunch<\/p>\n\n\n\n<p>2 cloves of garlic, peeled<\/p>\n\n\n\n<p>4 cups of chicken broth (or more to taste)<\/p>\n\n\n\n<p>1 cup water (or more to taste)<\/p>\n\n\n\n<p>1 cup cooking cream<\/p>\n\n\n\n<p>Salt and freshly grated pepper to taste<\/p>\n\n\n\n<p>1 tbsp fresh thyme leaves to garnish or to taste<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p>Instructions:<\/p>\n\n\n\n<ol>\n<li>Melt the butter in a large pot over medium heat. Saut\u00e9 the mushrooms and 1 pinch of salt in the melted butter until the mushrooms release their juices, 5 to 10 minutes.<\/li>\n<\/ol>\n\n\n\n<p>2. Reduce heat to medium-low and continue to cook, stirring often, until juices have evaporated and mushrooms are caramelized, 15 to 25 minutes. Set aside a few mushroom slices for garnish later, if desired.<\/p>\n\n\n\n<p>3. Add onions to mushrooms; cook until the onion is soft and translucent, about 5 minutes.<\/p>\n\n\n\n<p>4. Mix the flour into the mushroom mixture and cook, stirring often, to remove the taste of raw flour, about 2 minutes.<\/p>\n\n\n\n<p>5. Add a sprig of thyme and cloves of garlic, then pour in 4 cups of chicken broth and 1 cup of water. Reduce the heat and cook for 1 hour. Remove and discard the thyme bundle.<\/p>\n\n\n\n<p>6. Pur\u00e9e the soup with an immersion blender until smooth and thick. Stir in the cream. If it is too thick, add a little chicken broth or water. Season with salt and black pepper.<\/p>\n\n\n\n<p>7.
